Barry worked and head of R&D at the Mars Confectionery Company for many years, both in the cocoa plantations and here in the UK.
He has a detailed knowledge of why so many of us like chocolate and of the scientific approach to understanding its appeal.
This presentation give the history of Chocolate's discovery and understanding the attempts of the industry to scientifically analyse what make chocolate so desirable - both in scent and taste.
